Preparation

    Prepare the Veal

    Season the veal scallopines with salt and black pepper on both sides.

    Chop the Vegetables

    Finely chop the shallots and garlic. Clean and slice the wild mushrooms.

Cooking

    Sear the Veal

    In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat. Add the veal scallopines and cook for about 2-3 minutes on each side until golden brown. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil and butter. Add the chopped shallots, garlic, and wild mushrooms. Sauté for about 5 minutes, or until the mushrooms are tender.

    Deglaze the Pan

    Pour in the Marsala wine and chicken broth, scraping the bottom of the skillet to release any browned bits. Bring to a simmer.

    Combine and Finish Cooking

    Return the seared veal to the skillet. Let it simmer in the sauce for about 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.

Serving

    Plate and Serve

    Remove the veal from the skillet and place on plates. Spoon the mushroom Marsala sauce over the veal and serve immediately.
