Tomato Sauce
Method
Preparing the Mussels
- 1
Clean the Mussels
Rinse the mussels under cold water to remove any sand or debris. Discard any mussels that are cracked or open.
- 2
Sauté the Mussels
In a large pot, heat the olive oil over medium heat. Add the minced garlic and red chili flakes and sauté for about 1-2 minutes until fragrant.
- 3
Add the Mussels
Add the cleaned mussels to the pot, followed by the white wine. Cover the pot and cook for 5-7 minutes, shaking occasionally, until the mussels have opened. Discard any mussels that do not open.
Making the Tomato Sauce
- 4
Sauté Vegetables
In a separate saucepan, heat a tablespoon of olive oil over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
- 5
Add Tomatoes and Seasoning
Stir in the canned crushed tomatoes, chopped basil, salt, and black pepper. Simmer for about 10-15 minutes until the sauce thickens slightly.
Combining and Serving
- 6
Combine the Mussels with Sauce
Once the tomato sauce is ready, add the sautéed mussels to the sauce, stirring gently to combine. Cook for an additional 2-3 minutes to allow flavors to meld.
- 7
Serve
Serve the spicy mussels hot, garnished with additional fresh basil if desired. Enjoy with crusty bread to soak up the sauce.
