Prepare the Nuts
Preheat your oven to 350°F (175°C). Spread the almonds and hazelnuts on a baking sheet and toast them in the preheated oven for about 10-12 minutes, or until they are golden and fragrant. Remove from the oven and let them cool.
Chocolate Mixture

Melt the Chocolate
In a double boiler, melt the dark chocolate and milk chocolate together over low heat, stirring frequently until smooth. Remove from heat once melted.

Combine with Nuts
Once the chocolate is melted, stir in the toasted almonds and hazelnuts until they are fully coated with the chocolate.

Prepare the Sugar
In a saucepan, combine the granulated sugar and water. Cook over medium heat, stirring constantly until the sugar dissolves. Allow the mixture to boil without stirring until it turns a golden amber color (about 5-7 minutes).

Spread and Cool
Pour the mixture onto a parchment-lined baking sheet and use a spatula to spread it into an even layer. Sprinkle with sea salt and let it cool completely at room temperature (about 1 hour) or refrigerate for faster cooling.

Break into Pieces
Once cooled and set, break the brittle into pieces and store in an airtight container.
