Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.

  3. 3

    Beat Eggs and Sugar

In another bowl, beat the eggs and granulated sugar together until the mixture is light and fluffy.

  4. 4

    Combine Wet Ingredients

Gradually add the olive oil, milk, vanilla extract, lemon zest, and orange zest to the egg mixture, mixing until fully incorporated.

  5. 5

    Combine Wet and Dry Mixtures

Slowly fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.

  6. 6

    Bake the Cakes

Divide the batter evenly between the prepared cake pans and smooth the tops. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

  7. 7

    Cool the Cakes

Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Creme Topping Preparation

  1. 8

    Whip the Cream

In a medium mixing bowl, add the heavy cream, powdered sugar, and vanilla extract. Beat with an electric mixer until soft peaks form.

  2. 9

    Add Zest

Gently fold in the orange and lemon zest into the whipped cream until well combined.

Assembling the Cake

  1. 10

    Layer the Cakes

Once the cakes are completely cool, place one layer on a serving platter. Spread a layer of the whipped creme topping on top.

  2. 11

    Add Second Layer

Place the second cake layer on top of the first, and spread the remaining whipped cream on top and around the sides of the cake.

  3. 12

    Decorate and Serve

Optionally, garnish with additional citrus zest or slices. Slice and serve the Olive Oil Citrus Cake.
