Prepare the Octopus
Rinse the octopus under cold water to remove any debris. If the octopus is frozen, ensure it is fully thawed before cooking.

Boil the Octopus
In a large pot, bring water to a boil. Add a generous amount of sea salt (about 1 tablespoon) to the boiling water. Carefully add the octopus and boil for about 30-40 minutes, or until tender. Test for doneness by piercing the thickest part of the tentacle with a fork; it should slide in easily.

Drain and Cool
Once the octopus is cooked, remove it from the pot and let it cool slightly. You can reserve some of the boiling water for later use if desired.

Slice the Octopus
Using a sharp knife, slice the octopus into bite-sized pieces. Arrange them on a serving platter.

Dress the Octopus
Drizzle the extra virgin olive oil over the sliced octopus. Sprinkle with paprika and additional sea salt to taste.
