    In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.

    Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Avoid overworking the dough.

    Chill the dough

    Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

    Prepare the fruit

    While the dough chills, wash and prepare the mixed berries, cutting larger strawberries into quarters.

    Mix the filling

    In a mixing bowl, combine the mixed berries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Gently toss to combine and set aside.

Assembly and Baking
