    Juicing the Lemons

    Juice the fresh lemons until you have 1 cup of lemon juice. Strain the juice through a fine mesh sieve to remove seeds and pulp.

    Dissolving Sugar

    In a medium saucepan, combine 1 cup of water and 1 cup of sugar. Heat over medium heat, stirring until the sugar is completely dissolved. Remove from heat and allow to cool.

Mixing and Freezing

    In a large mixing bowl, combine the strained lemon juice, cooled sugar syrup, and the remaining 1 cup of water. Mix well.

    Adding Mint (Optional)

    If using, finely chop the fresh mint leaves and add them to the lemon mixture for a hint of mint flavor.

    Freezing the Mixture

    Pour the lemon mixture into a shallow dish and place it in the freezer. After 30 minutes, use a fork to scrape the mixture and break up any ice crystals. Repeat this process every 30 minutes for about 3 hours, or until the sorbet is fully frozen and fluffy.
