Preparation of the Octopus

    Rinse the octopus under cold water to remove any debris. If needed, remove the beak and ink sac.

    In a large pot, bring salted water to a boil. Add the whole octopus and boil for about 45 minutes or until tender. Remove from heat and let cool.

    In a bowl, mix together olive oil, minced garlic, lemon juice, chopped parsley, sea salt, black pepper, and smoked paprika.
