Method
Fried Calamari Preparation
- 1
Prepare the Calamari
In a medium bowl, soak the cleaned calamari rings in buttermilk. Allow to marinate for at least 30 minutes in the refrigerator.
- 2
Create the Coating
In a separate bowl, mix the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder until well combined.
- 3
Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the oil to 350°F (175°C). Use a thermometer for accuracy to ensure safe frying.
- 4
Coat the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge the rings in the flour mixture until evenly coated.
- 5
Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, being careful not to overcrowd the pot. Fry for about 2-3 minutes, or until golden brown and crispy.
- 6
Drain and Serve
Using a slotted spoon, transfer the fried calamari to a paper towel-lined plate to drain excess oil. Serve immediately while hot.
Dipping Sauce Preparation
- 7
Mix the Dipping Sauce
In a small bowl, combine mayonnaise, ketchup, lemon juice, and hot sauce. Mix until smooth and well blended.
