Dough Preparation

    Prepare Puff Pastry

    Thaw the puff pastry according to package instructions. Once thawed, roll it out on a lightly floured surface to about 1/8 inch thickness.

    Cut Dough

    Using a round cutter or a glass, cut out circles from the rolled pastry, approximately 4-5 inches in diameter.

Filling Preparation

    Sauté Vegetables

    In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Add minced garlic and diced red bell pepper, cooking for an additional 2-3 minutes.

    Combine Filling Ingredients

    In a mixing bowl, combine the shredded chicken, sautéed vegetables, cumin, paprika, salt, black pepper, and chopped parsley. Mix well until evenly combined.

Empanada Assembly

    Fill the Dough

    Place a spoonful of the chicken filling in the center of each dough circle. Be careful not to overfill.

    Seal the Empanadas

    Fold the dough over the filling to create a half-moon shape. Press the edges together to seal, and use a fork to crimp the edges for a decorative touch.

    Brush with Egg

    Brush the tops of the empanadas with the beaten egg to give them a golden color when baked.

Baking

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Bake Empanadas

    Place the assembled empanadas on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes or until golden brown.
