For the Croquettes

Method

Preparing the Croquette Mixture

  1. 1

    Boil the Potatoes

Peel the potatoes and cut them into quarters. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

  2. 2

    Mash the Potatoes

Drain the potatoes and return them to the pot. Mash them until smooth and let them cool slightly.

  3. 3

    Mix in Cheese and Seasonings

Add the shredded cheddar cheese, salt, black pepper, garlic powder, and onion powder to the mashed potatoes. Mix well until the cheese is melted and everything is combined.

  4. 4

    Form the Croquettes

Allow the mixture to cool completely, then shape it into small oval or round patties, about 1-2 inches in size.

Coating the Croquettes

  1. 5

    Prepare for Breading

Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

  2. 6

    Coat Each Croquette

Dredge each croquette in flour, dip it in the beaten eggs, and then coat it in breadcrumbs. Ensure each croquette is evenly coated.

Frying the Croquettes

  1. 7

    Heat the Oil

In a deep frying pan or pot, heat the oil over medium heat until it reaches 350°F (175°C).

  2. 8

    Fry the Croquettes

Carefully place the breaded croquettes in the hot oil, frying them in batches to avoid overcrowding. Fry for about 3-4 minutes on each side, or until golden brown.

  3. 9

    Drain Excess Oil

Using a slotted spoon, remove the croquettes from the oil and place them on a plate lined with paper towels to drain excess oil.

Serving

  1. 10

    Serve Hot

Serve the croquettes hot, optionally with a dipping sauce, such as aioli or ketchup.
