Method

Prepare the Chocolate Peanut Butter Filling

    Mix the Ingredients

    In a medium bowl, combine the creamy peanut butter, powdered sugar, vanilla extract, and a pinch of salt. Mix until smooth and well combined.

    Form into Balls

    Using your hands, scoop out tablespoon-sized portions of the peanut butter mixture and roll them into balls. Place them on a parchment-lined baking sheet. Repeat until all the mixture is used.

    Chill the Filling

    Cover the baking sheet with plastic wrap and place it in the freezer for about 30 minutes, or until the peanut butter balls are firm.

Prepare the Chocolate Coating

    Melt the Chocolate

    In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.

Assemble the Tartufo

    Coat the Peanut Butter Balls

    Remove the peanut butter balls from the freezer. Dip each ball into the melted chocolate, ensuring it is fully coated. Use a fork to lift it out and allow any excess chocolate to drip off.

    Set on Parchment

    Place the coated balls back onto the parchment-lined baking sheet. Repeat for all the peanut butter balls.

    Sprinkle Toppings

    While the chocolate is still wet, sprinkle chopped peanuts on top of each tartufo. Optionally, sprinkle a small pinch of sea salt on each one.
