In a large skillet, heat the olive oil over medium heat.

Add the chistorra sausage links to the skillet, cooking until they are browned on all sides, about 5-7 minutes.
Cooking the Sauce

Pour the white wine into the skillet with the sausages, scraping any browned bits from the bottom.

Add the chicken or vegetable broth and bring the mixture to a simmer.

Season with salt and black pepper to taste. Let it cook for an additional 10-15 minutes, allowing the sauce to reduce slightly.

Once the sauce has thickened and the sausages are cooked through, stir in the chopped parsley.
