Chicken Preparation
- 1
Prepare the chicken
Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and black pepper on both sides.
- 2
Bread the chicken
Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan cheese. Dredge each chicken breast in flour, then dip into the eggs, and finally coat with the breadcrumb mixture.
Cooking
- 3
Fry the chicken
In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from skillet and drain on paper towels.
- 4
Assemble the dish
In a baking dish, spread a layer of marinara sauce. Place the fried chicken breasts on top of the sauce. Spoon additional marinara sauce over each chicken breast, then sprinkle shredded mozzarella cheese on top.
- 5
Bake
Transfer the baking dish to the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
- 6
Garnish and Serve
Remove from the oven, garnish with fresh basil if desired, and serve hot.
