Preparing the Batter

    Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, salt, and nutmeg until well combined.

    Combine Wet Ingredients

    In another bowl, whisk together the vegetable oil, eggs, and vanilla extract until smooth. Stir in the grated carrots and crushed pineapple.

    Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

Baking the Cake
