Main Ingredients

Method

Preparation

  1. 1

    Prepare the Scallops

Rinse the scallops under cold water and pat them dry with a paper towel. Season both sides with salt and black pepper.

  2. 2

    Wrap with Bacon

Take a slice of bacon and wrap it around each scallop, securing it with a toothpick if necessary. Ensure the bacon covers the scallop completely.

  3. 3

    Prepare the Tomato

Slice the large tomato into thick slices (about 1/2 inch each). Set aside for serving.

  4. 4

    Prepare Fig Sauce

In a small saucepan, heat the fig jam over low heat, stirring occasionally until it becomes a smooth sauce. This should take about 5 minutes.

Cooking

  1. 5

    Cook the Scallops

In a large skillet, heat the olive oil over medium-high heat. Once hot, add the wrapped scallops and cook for about 2-3 minutes on each side, or until the bacon is crispy and the scallops are opaque and cooked through.

Serving

  1. 6

    Plate the Dish

On a serving platter, arrange the sliced tomatoes. Place the cooked bacon-wrapped scallops on top of the tomato slices. Drizzle with the warm fig sauce.

  2. 7

    Garnish and Serve

Optionally, garnish with additional black pepper or fresh herbs. Serve immediately while warm.
