Preparation and Cooking

    Make the Ravioli Dough

    In a mixing bowl, combine the flour and a pinch of salt. Make a well in the center, add the eggs, and mix until a dough forms. Knead for 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    In a skillet, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant. Add spinach and cook until wilted. Remove from heat, mix in ricotta and chopped artichokes, season with salt and pepper, and let it cool.

    Roll Out the Dough

    Divide the rested dough into 4 pieces. Roll each piece out thinly on a floured surface, about 1/16 inch thick.

    Form the Ravioli

    Place a spoonful of the filling on one half of the rolled dough, fold over, and press to seal. Use a fork to crimp the edges. Repeat with remaining dough and filling.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Cook the ravioli for 3-4 minutes until they float. Remove and set aside.

    Prepare the Sauce

    In a saucepan, heat the remaining olive oil over medium heat. Add diced tomatoes and cook for 5 minutes. Stir in heavy cream and season with salt and pepper. Simmer for another 5 minutes.

    Blacken the Shrimp

    In a separate skillet, heat a little olive oil over medium-high heat. Toss the shrimp with Cajun seasoning and cook for 2-3 minutes on each side until cooked through and blackened.

    Combine and Serve

    To serve, plate the ravioli and pour the sauce over them. Top with blackened shrimp. Enjoy!
