Fried Green Tomatoes with Pimento Cheese

Prepare the Pimento Cheese
In a mixing bowl, combine cream cheese, sharp cheddar cheese, pimentos, mayonnaise, garlic powder, onion powder, salt, and black pepper. Mix until smooth and fully combined. Set aside.

Prepare the Fried Green Tomatoes
Slice the green tomatoes into 1/4 inch thick slices. In one bowl, place the buttermilk. In another bowl, mix the flour, cornmeal, salt, and pepper.

Coat the Tomatoes
Dip each tomato slice first into the buttermilk, then dredge in the flour mixture, ensuring they are well coated.

Fry the Tomatoes
Heat vegetable oil in a skillet over medium heat. Fry the coated tomato slices in batches for about 3-4 minutes on each side or until golden brown. Drain on paper towels.

Prepare the Salad
In a salad bowl, toss the spring mix greens with sliced Vidalia onion, balsamic glaze, olive oil, salt, and pepper.

Plate the fried green tomatoes and top with a generous spoonful of pimento cheese. Serve alongside the spring mix salad.
