Method

Panisse Preparation

    Prepare the Panisse

    In a saucepan, bring water to a boil. Gradually whisk in chickpea flour, salt, black pepper, and cayenne pepper. Cook over medium heat, stirring continuously until thickened (about 5-7 minutes). Pour the mixture into a greased baking dish and spread evenly. Let it cool and set for at least 1 hour.

    Cut and Fry

    Once set, cut the chickpea mixture into squares or rectangles. Heat olive oil in a frying pan over medium heat. Fry the pieces until golden and crispy on both sides (about 3-4 minutes per side). Remove and drain on paper towels.

Hummus Preparation

    Make the Hummus

    In a food processor, combine canned chickpeas (drained), tahini, lemon juice, garlic, olive oil, salt, and water. Blend until smooth. Adjust seasoning if needed.

Salad Preparation

    Prepare the Salad

    Using a vegetable peeler, shave the zucchini, carrot, and radish into thin ribbons. Toss with olive oil, lemon juice, and salt to taste.

Coulis Preparation

    Make the Coulis

    Roast the red bell peppers until charred. Peel and remove seeds. In a blender, combine roasted peppers, olive oil, garlic, balsamic vinegar, and salt. Blend until smooth.
