Prepare the crust
Preheat the oven to 325°F (160°C). In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are well coated. Press the mixture into the bottom of a 9-inch springform pan to form an even layer.

Make the cheesecake filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and continue to beat until well combined. Mix in the heavy cream, sour cream, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition.

Cool and refrigerate
Remove the cheesecake from the oven and let it cool at room temperature for 30 minutes. Then, refrigerate for at least 4 hours, or overnight for best results.

Before serving, sprinkle the granulated sugar evenly over the top of the chilled cheesecake. Using a kitchen torch, carefully melt the sugar until it forms a caramelized crust. Let it cool for a few minutes before slicing.
