Prepare the Chicken
Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch.

Set Up Breading Station
Set up three shallow dishes: one with flour mixed with salt and pepper, one with beaten eggs, and one with breadcrumbs.

Bread the Chicken
Dredge each chicken breast in flour, shaking off the excess, then dip into the egg, and finally coat with breadcrumbs, pressing to adhere.

Cook the Chicken
In a large skillet, heat the olive oil over medium-high heat. Add the breaded chicken cutlets and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

Prepare the Topping
In a small saucepan, heat the crushed tomatoes over low heat until warmed through.

Assemble the Dish
Place the cooked chicken cutlets on plates, top with warm crushed tomatoes, a handful of arugula, and sprinkle with grated Grana Padano cheese.
