    Prepare Ingredients

    Chop the bacon, tomato, spinach, onion, and crumble the feta cheese. Set aside.

    Cook Bacon

    In a non-stick skillet, cook the bacon until crispy. Remove and drain on paper towels, leaving the bacon grease in the skillet.

    Sauté Vegetables

    In the same skillet, add the onions and sauté until translucent. Add the tomatoes and spinach, cooking until the spinach is wilted.

    Make the Omelet

    In a bowl, whisk together the eggs, salt, and black pepper. Pour the egg mixture into the skillet over the sautéed vegetables. Cook until the edges start to set.

    Add Fillings

    Sprinkle the cooked bacon and feta cheese over one half of the omelet. Fold the other half over the toppings.

    Finish Cooking

    Let cook for another minute or until the inside is set to your liking. Slide the omelet onto a plate.

    Serve hot with your choice of potatoes, grits, or toast. Enjoy!
