    Preparation

    Preheat your grill or oven to a medium-high heat (about 400°F or 200°C). Make sure it is well greased to prevent sticking.

    Seasoning the Fish

    Pat the branzino dry with paper towels. Rub both sides of the fish with olive oil, then season generously with sea salt and black pepper, inside and out.

    Stuffing the Fish

    Stuff the cavity of the branzino with lemon slices and fresh herbs. This will infuse the fish with flavor as it cooks.

    Grilling or Baking

    Place the branzino on the grill or in the oven. Cook for about 20-25 minutes, flipping halfway through, until the flesh is opaque and flakes easily with a fork.

    Serving

    Once cooked, carefully transfer the fish to a serving platter. Use a sharp knife to carve the fish tableside for an impressive presentation.
