    Prepare the Steak

    Remove the Wagyu New York Strip from the refrigerator and allow it to come to room temperature for about 30 minutes. This ensures even cooking.

    Season the Steak

    Pat the steak dry with paper towels. Generously season both sides with kosher salt and freshly ground black pepper.

    Heat the Pan

    In a large skillet, heat the olive oil over high heat until it's shimmering but not smoking.

    Sear the Steak

    Carefully place the steak in the hot skillet. Sear for about 4-5 minutes on one side, until a deep brown crust forms.

    Flip and Finish Cooking

    Flip the steak and add the rosemary if using. Cook for another 4-5 minutes for medium-rare, or until your desired doneness is reached.

    Rest the Steak

    Remove the steak from the skillet and let it rest on a cutting board for at least 5 minutes before slicing. This allows the juices to redistribute.

    Slice against the grain and serve immediately, enjoying the rich flavor and tenderness of the Wagyu.
