Roasting the Vegetables

Preheat the oven to 400°F (200°C). On a baking sheet, toss cherry tomatoes, bell peppers, and zucchini with 2 tablespoons of olive oil, minced garlic, salt, and black pepper. Roast for 20-25 minutes or until the vegetables are tender and slightly charred.

Marinating the Antipasti

In a large bowl, combine the roasted vegetables, olives, artichoke hearts, and fresh basil leaves. Drizzle with the remaining olive oil and balsamic vinegar. Toss gently to coat everything evenly, adding more salt and pepper to taste.

Chilling

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.

Serving

Serve the antipasti cold or at room temperature, garnished with additional fresh basil if desired.
