    Prepare the Pork Belly

    Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat. Rub the pork belly with salt and black pepper, ensuring it gets into the scored skin.

    Marinate

    Let the pork belly marinate for at least 1 hour, or preferably overnight in the refrigerator for maximum flavor.

    Fire-Roast the Pork Belly

    Preheat the grill or fire pit to high heat. Place the pork belly skin-side up on the grill and roast for about 30-40 minutes, turning occasionally until the skin is crispy and the meat is tender.

    Prepare Malagueta Honey

    While the pork is roasting, finely chop the Malagueta peppers and mix them with honey in a small bowl. Let it sit to allow the flavors to meld.

    Once the pork belly is done, remove it from the grill and let it rest for 10 minutes before slicing. Serve warm with the Malagueta honey drizzled on top.
