Brought to Southern Brazil by Italian immigrants, polenta made from corn meal remains a staple in Brazilian kitchens to this day. Our traditional recipe is a crispy and delicious companion to the meal.

Add Butter and Cheese
Once the polenta is cooked, stir in the butter and grated Parmesan cheese until well combined. Remove from heat and let it cool slightly.

Shape and Chill
Pour the polenta into a greased rectangular dish and spread it out evenly. Allow it to cool completely at room temperature, then refrigerate for at least 1 hour or until firm.

Slice and Fry
Once firm, turn the polenta out onto a cutting board and slice into desired shapes (triangles or squares). Heat olive oil in a skillet over medium heat and fry the polenta slices until golden and crispy on both sides, about 3-4 minutes per side.

Serve the crispy polenta hot as a side dish to accompany your favorite meals.
