    Trim any excess fat from the picanha, leaving a thin layer to help retain juiciness during cooking.

    Generously coat the picanha with rock salt and black pepper, ensuring an even coverage on all sides. Let it rest at room temperature for about 30 minutes.

    Preheat the Grill

    Prepare your grill for high heat. If using charcoal, let the coals burn until they are covered with white ash. For a gas grill, preheat on high for about 10-15 minutes.

    Grill the Picanha

    Place the picanha on the grill, fat side down. Grill for about 5-7 minutes on each side for medium-rare, or until it reaches your desired doneness.

    Rest and Slice

    Remove the picanha from the grill and let it rest for 10 minutes. Slice thinly against the grain and serve immediately.
