    Prepare the Pork Loin

    Trim any excess fat from the pork loin and slice it into medallions about 2.5 cm thick.

    Season the Medallions

    In a bowl, mix olive oil, salt, black pepper, and garlic powder. Rub this mixture onto both sides of the pork medallions.

    Crust with Parmesan

    Spread the grated Parmesan cheese on a plate. Press each seasoned pork medallion into the cheese to coat both sides.

    Grill the Medallions

    Preheat the grill to medium-high heat. Grill the pork medallions for about 4-5 minutes on each side, or until they are cooked through and have nice grill marks.

    Garnish and Serve

    Once cooked, remove from the grill and let rest for a few minutes. Garnish with chopped fresh parsley before serving.
