Prepare the Beef
Trim any excess fat from the beef tenderloin and cut it into 1-inch cubes.
Marinate the Cubes
In a bowl, mix olive oil, garlic powder, salt, black pepper, fresh rosemary, and lemon zest. Add the beef cubes and toss to coat evenly. Let marinate for at least 30 minutes.
Soak Skewers
If using wooden skewers, soak them in water for at least 20 minutes to prevent burning on the grill.
Skewer the Meat
Thread the marinated beef cubes onto the soaked skewers, leaving a small space between each piece.
Preheat the Grill
Preheat your grill to high heat.
Grill the Skewers
Place the skewers on the grill and cook for about 2-3 minutes on each side for medium-rare, or until desired doneness.
Rest and Serve
Remove the skewers from the grill and let them rest for a few minutes. Carefully carve the meat from the skewers and serve immediately.
