Cooking Instructions

  1. 1

    Prepare Chimichurri Sauce

In a medium bowl, combine the chopped parsley, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Mix well and set aside.

  2. 2

    Prepare Asparagus

Trim the ends of the asparagus. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the asparagus and sauté for about 5-7 minutes until tender. Season with salt and pepper to taste.

  3. 3

    Cook Salmon

Season the salmon fillets with salt and black pepper. In another skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the salmon fillets skin-side down and cook for about 4-5 minutes until the skin is crispy. Flip and cook for another 3-4 minutes until the salmon is cooked through.

  4. 4

    Serve

Place the sautéed asparagus on plates, top with the pan-seared salmon, and drizzle with chimichurri sauce. Garnish with lemon wedges.
