Cauliflower Steak and Chickpea Salad

Preparation and Cooking

    Prepare the Cauliflower Steaks

    Preheat your oven to 425°F (220°C). Cut the cauliflower into thick slices (steaks).

    Season and Roast

    Drizzle olive oil over the cauliflower steaks and season with garlic powder, salt, and black pepper. Place on a baking sheet and roast in the oven for about 25 minutes.

    Add Parmesan

    After 25 minutes, sprinkle the parmesan cheese over the cauliflower steaks and return to the oven for an additional 10 minutes, or until the cheese is golden and crispy.

    Prepare the Chickpea Salad

    While the cauliflower is roasting, rinse and drain the chickpeas. In a bowl, combine the chickpeas, halved cherry tomatoes, diced red onion, and chopped cilantro. Drizzle with olive oil and lemon juice, and season with salt and pepper to taste.

    Make the Basil Sauce

    In a blender, combine fresh basil, lemon juice, and olive oil. Blend until smooth and adjust seasoning as needed.

    Plate and Serve

    Once the cauliflower steaks are done, plate them with the warm chickpea salad on the side. Drizzle the basil sauce over the cauliflower steaks and serve immediately.
