Custard Preparation

Prepare the Vanilla Cream
In a saucepan, combine the heavy cream and the vanilla bean (split and scraped). Heat over medium until just simmering. Remove from heat and let steep for 15 minutes.

Mix the Egg Yolks
In a mixing bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is pale and thick.

Combine Cream and Egg Mixture
Slowly pour the warm cream into the egg mixture while whisking constantly to temper the eggs. Strain the mixture through a fine-mesh sieve into a clean bowl.

Cool and Chill
Remove the ramekins from the water bath and let cool. Once cooled, cover and refrigerate for at least 2 hours or overnight.

Caramelize the Sugar
Before serving, sprinkle a thin layer of granulated sugar over the top of each custard. Using a kitchen torch, caramelize the sugar until it melts and forms a crispy top. Let it cool for a minute.

Serve with Berries
Garnish with fresh berries and serve immediately.
