    Prepare the Brigadeiro Filling

    In a medium saucepan over medium heat, combine the sweetened condensed milk, cocoa powder, and butter. Stir constantly until the mixture thickens and pulls away from the sides of the pan, about 10 minutes. Let it cool completely.

    Preheat your oven to 350°F (175°C). In a mixing bowl, combine the chocolate cookie crumbs with melted butter until well mixed. Press the mixture into the bottom of a 9-inch pie dish to form the crust. Bake for 10 minutes and then let it cool.

    Assemble the Brigadeiro

    Once the brigadeiro filling has cooled, scoop small amounts and roll them into balls. Place these balls into the cooled chocolate cookie crust evenly.

    Prepare the Ganache

    In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and add the semisweet chocolate chips. Let it sit for a minute, then stir until smooth.

    Finish and Serve

    Pour the chocolate ganache over the brigadeiro filling in the cookie crust. Sprinkle chocolate sprinkles on top. Chill in the refrigerator for at least 2 hours before serving.
