    Season the beef short ribs with salt and black pepper. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef ribs and sear on all sides until browned. Remove the ribs and set aside.

    In the same pot, add diced onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute.

    Stir in the carrots, potatoes, beef broth, thyme, and bay leaf. Return the beef ribs to the pot.

    Bring the mixture to a simmer. Cover and reduce heat to low. Let it braise for about 2 to 2.5 hours until the meat is tender and falling off the bone.

    Once the beef ribs are tender, remove them from the pot. Shred the meat using two forks and return it to the pot. Stir to combine with the vegetables.
