Method

Preparation

  1. 1

    Make the Pão de Queijo

Preheat your oven to 375°F (190°C). In a bowl, mix 2 cups of tapioca flour with 1 cup of hot milk, 1/2 cup of oil, and a pinch of salt until combined. Let it cool. Then, add 1 cup of grated cheese and 2 beaten eggs. Mix until smooth. Shape into small balls and place them on a baking sheet. Bake for 15-20 minutes until golden.

  2. 2

    Prepare Chorizo

In a skillet over medium heat, add the chorizo sausages and cook for about 10-12 minutes until fully cooked and browned. Remove and slice into bite-sized pieces.

  3. 3

    Guava and Cheese Spread

In a bowl, mix the cream cheese with chopped guava paste. Add sea salt and black pepper to taste. Stir until well combined.

  4. 4

    Finish the Dish

Serve the Pão de Queijo with the chorizo slices alongside the guava and cheese spread. Drizzle with olive oil, sprinkle fresh cilantro on top, and serve with lime wedges for squeezing.
