Cutting the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to make fries.

Soaking the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Drying the Fries
After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.

Frying the Fries
In a large pot, heat vegetable oil to 350°F (175°C). Fry the dried fries in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

Seasoning the Fries
While the fries are still hot, sprinkle with salt and black pepper, and toss to coat.

Drizzle the hot fries with truffle oil, then sprinkle generously with grated Parmesan cheese and chopped parsley. Toss lightly to combine.
