1. Prepare the Ingredients

Preheat the oven to 375°F (190°C). Rinse the cod fillets and pat them dry with paper towels. Season both sides with salt and black pepper.

2. Sauté the Aromatics

In a large oven-safe skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

3. Add the Vegetables

Add the artichoke hearts, cherry tomatoes, capers, and olives to the skillet. Stir gently to combine and sauté for about 5 minutes.

4. Deglaze with Wine

Pour in the white wine and lemon juice. Bring the mixture to a simmer, scraping any brown bits off the bottom of the skillet for flavor.

5. Add the Cod

Nestle the seasoned cod fillets into the skillet among the vegetables. Spoon some of the liquid over the fish.

6. Bake

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork.

7. Garnish and Serve

Remove from the oven, sprinkle with fresh parsley, and serve immediately with the pan juices.
