1. Prepare the Beer-Braised Sauerkraut
In a saucepan, combine the sauerkraut and Guinness beer. Bring to a simmer over medium heat and cook for about 10 minutes, stirring occasionally, until the flavors meld and the sauerkraut is heated through.
2. Assemble the Sandwich
Spread 1 tablespoon of Thousand Island dressing on one side of each slice of rye bread. Layer corned beef, beer-braised sauerkraut, and Swiss cheese on 2 slices of bread. Top with the remaining slices of bread, dressing side down.
3. Grill the Sandwich
Heat a skillet over medium heat and melt 1 tablespoon of butter. Place the sandwiches in the skillet and grill for about 4-5 minutes on each side, or until the bread is golden brown and the cheese is melted. Add more butter as needed.
4. Serve
Remove the sandwiches from the skillet, slice in half, and serve hot with extra Thousand Island dressing on the side.
