Prepare the Pasta

Cook the elbow macaroni in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.

Cook the Bacon

In a skillet, cook the smoked bacon over medium heat until crispy. Remove, chop into pieces, and set aside.

Make the Cheese Sauce

In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes. Gradually whisk in the milk, cooking until thickened. Add the cheddar and fontina cheese, stirring until melted and smooth. Season with salt and pepper.

Combine Ingredients

In a large bowl, combine the cooked macaroni, cheese sauce, and chopped bacon. Mix well.

Prepare the Topping

In a small bowl, toss the bread crumbs with olive oil. Spread the mac and cheese mixture into a baking dish and top with the seasoned bread crumbs.

Bake

Preheat the oven to 350°F (175°C). Bake the mac and cheese for 20-25 minutes or until the top is golden brown and crispy.
