    Prepare the Chicken

    Season the half chicken with salt, black pepper, and garlic powder. Heat olive oil in a large skillet over medium-high heat.

    Sear the Chicken

    Place the chicken in the skillet, skin-side down, and sear for about 10-15 minutes or until the skin is golden brown. Flip the chicken and reduce the heat to medium. Cook for another 15-20 minutes or until the chicken is cooked through.

    Prepare the Mashed Potatoes

    While the chicken is cooking, peel and chop the potatoes. Boil them in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot.

    Mash the Potatoes

    Add butter, milk, and chopped chives to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.

    Sauté the Green Beans

    In another skillet, add a little olive oil and sauté the green beans over medium heat for about 5-7 minutes until tender-crisp. Season with salt and pepper.

    Make the Au Jus

    Once the chicken is done, remove it from the skillet and let it rest. Pour the beef broth into the skillet, scraping up any brown bits from the bottom. Simmer for a few minutes to reduce slightly.

    Serve

    Plate the chicken with chive mashed potatoes and sautéed green beans. Drizzle the au jus over the chicken before serving.
