Make the Filling
In a large bowl, combine the ground pork, shredded cabbage, shredded carrots, chopped green onions, minced garlic, grated ginger, soy sauce, and sesame oil. Mix well until all ingredients are evenly incorporated.

Fill the Dumplings
Take a dumpling wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges of the wrapper with water, fold it in half, and pinch the edges to seal. Repeat with remaining wrappers and filling.

Cook the Potstickers
In a large skillet, heat the vegetable oil over medium-high heat. Arrange the potstickers in a single layer and cook for about 2-3 minutes until the bottoms are golden brown. Add 1/4 cup of water to the skillet, cover, and steam for 5 minutes.

Serve
Remove the lid and let the potstickers cook for an additional 2 minutes to crisp up the bottoms. Serve warm with ginger soy dipping sauce.
