Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to form fries.

Fry the Potatoes
Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

Assemble the Cheese Fries
Place the hot fries on a serving plate. Sprinkle the shredded cheddar cheese evenly over the fries. Optionally, you can place the fries in a broiler for 1-2 minutes to melt the cheese.

Finish with Toppings
Drizzle sour cream over the cheese fries and sprinkle with chopped green onions.
