Method

Preparation of Marinade

  1. 1

    Make the Marinade

In a large bowl, combine Greek yogurt, ginger garlic paste, lemon juice, garam masala, cumin powder, coriander powder, turmeric powder, chili powder, and salt. Mix well until all ingredients are thoroughly combined.

  2. 2

    Marinate the Chicken

Add the chicken pieces to the marinade and ensure they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, or preferably overnight for best results.

Cooking the Chicken

  1. 3

    Preheat the Tandoor or Oven

If using a tandoor, preheat it to a high temperature. If using an oven, preheat to 220°C (428°F) and place a baking sheet or a cast iron skillet inside to heat.

  2. 4

    Prepare the Chicken for Cooking

Remove the marinated chicken from the refrigerator. Drizzle vegetable oil over the chicken pieces and ensure they are evenly coated.

  3. 5

    Cook the Chicken

If using a tandoor, skewer the chicken pieces and cook for about 15-20 minutes, turning occasionally, until fully cooked and slightly charred. If using an oven, place the chicken on the preheated baking sheet and bake for 25-30 minutes, turning once halfway through.

Serving

  1. 6

    Prepare the Plate

Once the chicken is cooked, remove it from the tandoor or oven and let it rest for a few minutes.

  2. 7

    Garnish and Serve

Transfer the chicken pieces to a serving platter, garnish with fresh cilantro, and serve with naan or roti, lemon wedges, and sliced onions.
