Method

Preparation of Rice

  1. 1

    Rinse the Rice

In a large bowl, rinse the basmati rice under cold water until the water runs clear to remove excess starch.

  2. 2

    Soak the Rice

Soak the rinsed rice in water for 30 minutes, then drain.

  3. 3

    Cook the Rice

In a pot, bring 4 cups of water to a boil. Add the soaked rice and salt. Reduce the heat to low, cover, and cook for 15-20 minutes until the rice is fluffy and water is absorbed.

Cooking the Vegetables

  1. 4

    Heat the Oil

In a large skillet, heat 3 tablespoons of ghee or vegetable oil over medium heat.

  2. 5

    Sauté the Onions

Add the thinly sliced onion and sauté until golden brown, about 5-7 minutes.

  3. 6

    Add Vegetables and Spices

Stir in the diced carrot, green peas, and bell pepper. Cook for another 5 minutes. Add cumin seeds, turmeric powder, garam masala, and black pepper, mixing well.

Combining Rice and Vegetables

  1. 7

    Mix It Together

Once the rice is cooked, gently fluff it with a fork and add it to the skillet with the sautéed vegetables. Mix well to combine all the flavors.

  2. 8

    Final Touch

Cook for an additional 2-3 minutes on low heat, allowing the flavors to meld together.

Serving

  1. 9

    Garnish and Serve

Transfer the Basmati Khazana to a serving dish, garnish with chopped cilantro, and serve with lemon wedges on the side.
