    Rinse and Soak Rice

    Rinse the basmati rice under cold water until the water runs clear to remove excess starch. Soak the rice in water for 30 minutes, then drain.

    Prepare Chickpeas

    If using canned chickpeas, drain and rinse them under cold water.

Cooking

    Cook Cumin Seeds

    Heat 2 tablespoons of oil in a large pot over medium heat. Add the cumin seeds and let them sizzle for a few seconds.

    Sauté Onions

    Add the finely chopped onion and sauté until they turn golden brown.

    Add Ginger-Garlic Paste

    Stir in the ginger-garlic paste and sauté for another 1-2 minutes until the raw smell disappears.

    Add Vegetables and Spices

    Add the mixed vegetables, turmeric powder, and salt. Cook for about 5 minutes until the vegetables are slightly tender.

    Combine Rice with Vegetables

    Add the soaked and drained basmati rice to the pot and gently mix everything together.

    Cook the Rice

    Pour in 4 cups of water and bring it to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes or until the rice is cooked and water is absorbed.

    Steam the Rice

    Once the rice is cooked, remove the pot from heat and let it sit covered for another 5 minutes.

    Mix in Chickpeas and Garam Masala

    Fluff the rice with a fork, and gently fold in the cooked chickpeas and garam masala. Adjust salt if necessary.

    Garnish and Serve

    Garnish with chopped cilantro and serve hot. Optionally, drizzle with lemon juice and add green chilies for an extra kick.
