Method

Preparation of Rice

  1. 1

    Rinse the Rice

In a large bowl, rinse 2 cups of basmati rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.

  2. 2

    Soak the Rice

Soak the rinsed rice in water for about 30 minutes. Drain and set aside.

Cooking the Vegetables

  1. 3

    Heat Oil and Add Spices

In a large pot, heat 2 tablespoons of cooking oil over medium heat. Add 1 teaspoon of cumin seeds and 1 bay leaf. Sauté for about 1 minute until fragrant.

  2. 4

    Add Diced Vegetables

Add 1 cup each of diced carrot, potato, and 1 cup of green peas to the pot. Sauté for 5-7 minutes until the vegetables are slightly tender.

  3. 5

    Season the Vegetables

Add 1 teaspoon of turmeric powder and 1 teaspoon of salt to the vegetables. Mix well to coat the vegetables in the spices.

Cooking the Rice

  1. 6

    Combine Rice and Water

Add the soaked and drained basmati rice to the pot with the vegetables. Pour in 4 cups of water. Stir gently to combine.

  2. 7

    Boil and Simmer

Increase the heat and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.

Final Touches

  1. 8

    Fluff the Rice

Once the rice is cooked, remove the pot from heat. Let it sit covered for an additional 5 minutes. Then, fluff the rice gently with a fork.

  2. 9

    Garnish and Serve

Add 1 cup of chopped fresh coriander leaves and 2 tablespoons of lemon juice over the rice. Gently mix to combine and serve hot.
