Prepare the Coffee Mixture
Brew the coffee and let it cool. Once cooled, mix in a tablespoon of sugar if desired.

Make the Mascarpone Mixture
In a large bowl, whisk the egg yolks and granulated sugar until pale and creamy. Add the mascarpone cheese and vanilla extract, mixing until smooth.

Whip the Cream
In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the mascarpone mixture until combined.

Assemble the Tiramisu
Dip each ladyfinger quickly into the coffee (do not soak). Layer half of the dipped ladyfingers in the bottom of a dish. Spread half of the mascarpone mixture over the ladyfingers. Repeat the layers with the remaining ladyfingers and mascarpone mixture.

Chill and Serve
Cover the dish and refrigerate for at least 4 hours or overnight. Before serving, dust with cocoa powder.
