Cook the Spaghetti
In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the spaghetti.

Prepare the Pancetta
In a large skillet over medium heat, cook the pancetta until it's crispy. This should take about 5-7 minutes. Remove from heat but keep warm.

Mix the Sauce
In a bowl, whisk together the egg yolks, grated Parmesan cheese, and black pepper until well combined.

Combine Everything
Add the drained spaghetti to the skillet with the pancetta, tossing to combine. Remove from heat and quickly pour in the egg mixture, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serve
Taste and adjust seasoning with salt and additional black pepper. Serve immediately with extra Parmesan cheese on top if desired.
