Cooking Instructions
- 1
Prepare the Fish
Preheat the oven to 200°C (400°F). Clean the branzino and make a few diagonal slashes on each side. Season with salt, pepper, and drizzle with olive oil.
- 2
Roast the Potatoes
In a bowl, toss diced potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for about 20 minutes until golden brown.
- 3
Cook the Seafood
In a large skillet, heat olive oil over medium heat. Add shrimp and mussels, cooking until the shrimp is pink and mussels have opened, about 5-7 minutes. Add cherry tomatoes, olives, and capers, cooking for another 3-5 minutes.
- 4
Combine and Serve
Once the potatoes are done, remove them from the oven and place the branzino on the baking sheet. Top with the cooked seafood mixture and return to the oven for an additional 10 minutes. Serve hot.
